Gingerbread Cookies (Ugly Sweater)

I found a Taste Of Home blog that listed "Every Christmas Cookie You'll Ever Need" for a total of 100. This was actually a recipe for Ugly Sweater cookies, but I read that the dough was gingerbread so I decided to use fall cutters instead with orange-tinted icing and chocolate sprinkles. I'm working on perfecting my royal icing and piping techniques as we roll into the holidays so this was a good (not-so-good ;) start.

[Oh, and we're in the process of moving and I packed my rolling pin for some reason, so I improvised with a mason jar...next time I'll either get the neighbor's or use a wine bottle (advice from others).

Smores Cookies

We recently stayed the weekend up in the mountains with friends. The hubby requested smores cookies so I found this recipe. Now, I'm not a marshmallow fan, but this was amazing! I used pre-crushed graham cracker crumbs and Hershey chocolate bars. I've been thinking about making them again (and again lol). Definitely a winner for a real smores alternative.

Santa Sugar Cookies (Christmas Cookie Countdown 2017 #9)

Sugar cookies are my least favorite because of all the time-consuming decorating. But....I will say, these were fairly easy--mostly piping and sprinkles. I loved using the heart-shaped cookie cutter; I could also see how these would make cute clowns for a birthday party. One thing to note is the size of the ingredient list. I try to always make a habit of reading other people's reviews and this time I'm glad I did. The recipe was supposed to make 48 but I definitely don't have time to decorate that many! lol Twenty-four was just fine. :)

Pinwheel Cookies (Christmas Cookie Countdown 2017 #6)

This one was easy to make, but took several steps (as in 2-3 days). I think next time I will freeze them then cut so that I get rounder shapes. My cookies definitely don't look like the picture. I will say though, I like the filling. It tasted like a liquid version of Terry's Orange. And once they were cooked, it was hard to stop eating them. *A word of caution, please use a good metal cookie spatula and take them immediately off the cookie sheet or they will get sticky and harden.*

Jeweled Coconut Drops (Christmas Countdown 2017 #2)

Day number 2 of my 5th annual Countdown to Christmas cookies. So far both have been amazing. I love macaroons anyway so you didn't have to convince me that these would be delicious. Cream cheese and coconut are good any day of the week. I did have to use the wooden spoon again after they finished cooking and used strawberry preserves instead. Here at 6400 ft elevation, I had to cook them for 15 minutes to get them toasted and dry. This will definitely not be the month to lose weight ;)

Marbled Oreos

Pinterest day! I don't usually do artsy desserts, but the next 2 posts, I knew I could handle (I hoped anyway). Marbled oreos are super easy and a great idea to do with kids. The color combinations are endless too. 1. I used almond bark, but you can buy melting chocolate in the wedding section at Walmart. 2. In the video, the girl mentions "chocolate coloring". It's actually Wilton's Icing color (found in the wedding section at Walmart). 3.You will have to dip your colors in the white chocolate after 3 cookie dips. Repeat every 3 cookies. 4. Use a narrow, deep dish for the cookie dunking if you want to coat at least half.

The hubby loves heath and it had been a while (few weeks) since he'd seen these type of cookies in the cookie jar. This was a yummy recipe.We'll see how long they stay in the jar. ;)

Pistachio Pudding Cookies

Ok, I'm convinced. Any cookies I make from now on will have pudding mix in them. In this elevation, they come out chewy and moist. It's amazing! For this recipe, I didn't have pistachios so I added (ice cream) nut topping and white chocolate chips-Yum! Having fun using up my pudding boxes. :)

White Chocolate Pudding Cookies


I'm remodeling the kitchen and this week I was tasked with replacing the wall cabinets. As I was putting foods back in the cupboards, I did an inventory and realized I have a lot of pudding mixes that need to be used. Tonight I decided to start with the white chocolate. Pinterest helped me out on this one. However, I didn't make it as a snickerdoodle, I followed the recipe up to the rolling in cinnamon and sugar part. After a taste-test of the dough and the raves from the hubby, I decided this is a new favorite. Very easy to make--similar to regular chocolate chip cookies. Also turned out perfect in high altitude. [A side note, every recipe I've used with a pudding mix here in the mountains has turned out beautifully. I think that is my new secret to beautiful cookie baking. :) ]

I saw these on Facebook this week and knew I HAD to make them. I was right-they are superb, like a party I  your mouth... Coconut, pecans, chocolate chips, oatmeal...Yum! I also liked that is made a larger batch. You're going to appreciate that when you serve it to your family.

Oatmeal Chocolate Chip Cookies (Stand Mixer)

I have been having so much fun with my new stand mixer (that the hubby bought me for Valentine's Day). Tonight, in an effort to keep the cookie jar full, I found this yummy recipe in my "Mixer Bible" cookbook:


Oatmeal Chocolate Chip Cookies

2 cups unbleached all-purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon 
1/4 tsp ground nutmeg
1 cup unsalted butter, softened
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
2 cups semisweet chocolate chips
1 1/2 cups old-fashioned rolled oats

1. In a medium bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg
2. Place butter in the mixer bowl. Attach the flat beater and mixer bowl to the mixer. Set to speed 4 and beat until soft and creamy. Increase to speed 6 and beat in brown sugar and granulated sugar until light and fluffy. Beat in eggs, one at a time, and vanilla. Reduce speed to stir and mix in flour mixture, in 3 additions. Mix in chocolate chips and oats until evenly incorporated.
3. Drop by rounded tablespoonfuls (15 ml), 2 inches (5 cm) apart, onto prepared baking sheets. Bake in middle of preheated oven for 10 to 12 minutes, or until golden and slightly firm to the touch, Let cool on sheets for 5 minutes, then transfer to wire racks to cool completely.

Howie Pruitt's Supreme Chocolate Chip Cookies

From Aunt Bees Mayberry Cookbook: Otherwise known as Monster Cookies. I left out the raisins, but otherwise was a great cookie. I think this one would be fun with the holidays when M&Ms offer different colors.

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs
1 12 oz package chocolate chips
1 12 oz package raisins
1 10 oz package plain M&M candies

In a small bowl combine flour, baking soda, and salt. Set aside. In a large bowl beat together the butter, sugar, brown sugar, and vanilla extract until creamy. Beat in the eggs. Gradually blend in the flour mixture. Stir in the chocolate and raisins. Drop the mixture by the tablespoon onto ungreased cookie sheets. Bake in a 375 degree oven for 9 to 11 minutes until the edges are golden brown. Remove from the oven and place the M&M candies on top of the cookies while the cookies are still hot. Serve with cold milk. [Makes about 3 dozen.]




Jolly Good Chocolate Chip Cookies

From the Aunt Bees Mayberry Cookbook: Good little cookie. Small recipe. Easy to make.

1/2 cup butter
6 tablespoons sugar
1 1/4 cups all-purpose flour
Half a beaten egg
1/2 tsp Vanilla extract
1/4 cup chocolate chips
Rolled or jumbo oats

Lightly grease a cookie sheet. In a large bowl cream together the butter and sugar until light and fluffy. Add the flour, egg, and a few drops of vanilla. Beat well. Add the chocolate chips. Shape by hand into little balls, and roll in the oats. Place them on the prepared cookie sheet and press them down slightly. Bake in a 350 degree oven for 10 to 15 minutes, until golden brown. Remove from teh tray while still hot and place on a wire rack to cool. [Makes up to 40 cookies, depending on how small you make the cookies]




Harvey's Little Big Orange Cookies

Another fun little recipe from Aunt Bees Mayberry Cookbook. I love orange flavored cookies, biscuits, cinnamon rolls, scones etc... I admittedly ate more than my share; the boys were not as enthralled as I was. ;)

1 cup butter, softened
1 cup sugar
1 egg
1 1/2 teaspoons orange extract
1 teaspoon grated orange peel
1 1/2 cups sifted all-purpose flour
1/2 teaspoon salt

In a large bowl cream together the butter and sugar. Add the egg and the remaining ingredients. Drop by the spoonful onto an ungreased cookie sheet. Bake in a 375 degree oven for 10 minutes. [Makes 2 dozen.]

Holiday Almond Tassies Recipe

Tassie, means small cup. This particularly recipe is an old Dutch recipe. I loved it because I love almond flavored anything. One caveat-I think it could have used more orange juice for a bit more kick/contrast. Although the cream cheese crust and filling were a good combo, it was almost too much work for this busy girl. Very glad that I own silicon mini muffin tins and had a good fat handle for creating the cups. 



Pecan Meltaways Recipe

I call these "Pecan Melt-in-your-Mouth" cookies. This is part of Taste of Home's "Countdown to Christmas Cookie" set and they are ah-mazing. One thing I've learned about cookies dipped in powdered sugar--it's imperative that you let them cool to room temperature. Also, these cookies don't taste quite right without the powdered sugar. They go from ehh' to wow! Super easy recipe, only makes a couple dozen, but nice for our small family.

Cranberry Cookies with Browned Butter Glaze Recipe

The picture does not do this recipe justice! These are probably the best cookies I have ever eaten. It was also my first time making browned butter glaze. I'm going to tuck this recipe away and use the glaze for cinnamon rolls. If you like to bake--you HAVE to make these. Your friends and family will love you (even more), should you decide to share. :)

Chocolate Mexican Wedding Cakes (Christmas Cookie Countdown)

Cinnamon and powdered sugar make this an exceptionally delightful cookie. I am adding this one to my list of favorites. :)




Toffee Almond Sandies (Christmas Cookie Countdown)

I'm a little behind on my Christmas cookie countdown because I tried the Betty Crocker version the first 2 days, but was sadly disappointed that it was mostly pre-packaged cookie mix recipes. Now I'm back on the Taste Of Home Cookie Countdown in which I get 1 cookie/day from Black Friday until December 25th. Every year I challenge myself to make each and every one of them for the past 8 years but have only been successful once. This is a very busy year so I'm picking the ones that don't require many steps. This recipe was a great choice for cookie #1. I didn't have chocolate covered heath crumbles, just toffee bits, so I added mini chocolate chips. These were hard to share. :)

Giant Molasses Cookies

On Black Friday, I'll start getting 1 cookie recipe per day as has been my tradition for the past 7 years. I usually do Taste of Home, but this year I opted to use Betty Crocker's option via daily emails. But, the cookie jar is empty and I'm anxious to try fun new recipes. I happened to see this series of fall cookies in one of my Taste of Home emails last week so I decided to get started a little early. I love that this recipe has pecans and even in high altitude they turned out perfect!
