Saltine Toffee Bark (Christmas Cookie Countdown 2017 #10)

Not sure how this is a cookie, but, I've always wanted to try this one. The hubby, who LOVES toffee, thought it was amazing. Personally, a little bit goes a LONG way. It definintely is toffee. I wish I had seen the alternate instructions which state to use brown sugar instead of white. I think it would have been a beautiful brown toffee color. Nonetheless, it was a great bark to add a variety plate of cookies. :)

Chocolate Chip Toffee Bars

So now that the weather is warming up and cooperating, my blog time is significantly reduced. I made this last week, but it's definitely a keeper--super yummy! I didn't have enough heath to sprinkle on top so I added butterscotch chips. Oh my---"Crack Bars"!  The shortbread bottom, sweetened condensed milk drizzle and topping definitely brought my clean eating to shame. Since the hubby loves heath, caramel and butterscotch, I have a feeling I will be making this one again. :)

Chocolate Chip Heath Bar Cookies

The hubby loves heath and it had been a while (few weeks) since he'd seen these type of cookies in the cookie jar. This was a yummy recipe.We'll see how long they stay in the jar. ;)

Butterscotch-Toffee Cheesecake Bars

Staying with the butterscotch theme, I added the hubby's 2nd favorite--Heath! Taste of Home posted this on Facebook the other day and I knew I had to make it. It was almost too easy to fix AND eat. ;)  By the way, my secret to anything that requires cream cheese is to let it get to room temperature--in this case, I pulled it out the night before and prepared it this morning so that I could chill it in plenty of time before lunch. Be prepared--you will have to fight yourself (almost physically) to stop eating them :)

Shortbread Toffee Cookie Bars

Yep, this just happened. Heath crumbles=the hubby's favorite. Shortbread=my favorite. Chocolate=our favorite. I had to almost literally pull myself away after 3 bites. I definitely should have waited until we had guests because I think I'm going to slide a little bit off the wagon this week. ;)  It was incredibly easy to make (too easy if you ask me, haha). If you get the chance and you love heath as much as we do, treat yourself. <3
