Cranberry Muffins (High Altitude)

During the holiday season, I bought a bag of cranberries but didn't end up using them. As they were nearing the end of ripeness, I pulled out my "Baking at High Altitude" Cookbook and found a recipe for Cranberry Muffins. As usual, Randi Levin's recipes turn out perfectly every time here at 6300 ft elevation. I just poured the bag of cranberries into the batter as well as some chopped walnuts. I did end up adding salt to the recipe, just enough to add flavor but not effect the baking chemistry. I know I enjoyed them but also got an extra thumbs up from the hubby and neighbors. :)


Preheat oven to 375 degrees F

1/2 cup (1 stick) melted margarine
1 1/2 cups sugar
4 eggs
2 cups milk
1 tablespoon vanilla
4 1/4 cups flour
2 tablespoons baking powder
1 teaspoon baking soda
1 teaspoon orange peel or orange zest
4 cups fresh or frozen and thawed cranberries
3/4 cup chopped walnuts (optional)

1. Thoroughly mix the melted margarine, sugar, eggs, milk and vanilla.
2. To the egg mixture, add the dry ingredients and orange peel alternately with the cranberries.
3. Grease 9-10 large muffin sections or 16-19 regular size muffin pan sections or 3 dozen mini muffin pan sections.
4. Fill muffin sections 7/8 full with the batter.
5. Bake 15-325 minutes (depending on the size of the muffin sections), until firm to touch or until an inserted toothpick comes out clean.

Add 1 extra egg when doubling or add 2 extra eggs when tripling this recipe.

Orange Cranberry Bread (High Altitude)

I can never get enough of orange sweet breads, scones, etc.  I was pleasantly surprised when I discovered the hubby also like orange breads--the only complaint was "not enough orange icing on top". haha Another great recipe from my "Baking at High Altitude Cookbook".


(Orange) Cranberry Nut Bread

1/2 cup (1 stick) butter
1 cup sugar
2 eggs
3 1/4 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
1 1/2 cups pure orange juice
1 teaspoon orange peel or orange zest
3 cups cranberries [I used orange infused cranberries]
3/4 cup chopped walnuts

**For the icing, I just used a regular icing recipe and added orange extract**

1. Cream the butter, sugar, eggs.
2. Add the flour, baking powder, baking soda, orange juice and orange peel or zest to the butter mixture.
3. Mix thoroughly while adding the cranberries and walnuts. Mix the batter until all the ingredients are fully incorporated.
4. Grease two 9-inch bread pans. 
5. Divide the batter evenly between the prepared pans.
6. Bake 50-60 minutes or until an inserted knife comes out clean.

Cranberry Cookies with Browned Butter Glaze Recipe

The picture does not do this recipe justice! These are probably the best cookies I have ever eaten. It was also my first time making browned butter glaze. I'm going to tuck this recipe away and use the glaze for cinnamon rolls. If you like to bake--you HAVE to make these. Your friends and family will love you (even more), should you decide to share. :)

Thanksgiving Menu 2016

Thanksgiving morning started with welcoming 2 rescue donkeys to our 4 legged family. Then our meal was planned and enjoyed by the members of Taste of Home; my selections were based on the requests of the boys. I really like their recipe box and shopping list feature. It makes it easy to get what you need from the grocery store and pull up all the recipes at once. The only exception were the 2 pies from my "Baking at High Altitude" cookbook, Noble Pig's Dill Pickle Dip and Rachael Ray's White Cheddar Mac and Cheese. As have many in the past, this was a truly blessed year.
