Turkey Burgers

Leftover hamburger buns + thawed ground turkey=Turkey Burgers.

The texture is definitely not as easy to make into patties, but the egg helps keep it constituted when cooking. If you're looking for the beefy hardiness, this isn't it. But if you're looking for a healthier option that goes well with ketchup, pickles, onions, lettuce and tomato, this is an excellent alternative.

Leftover Turkey in Creamy Mushroom Sauce

I tried to cook a turkey in my new CharBroil Oil-Less Turkey Fryer but the wind literally picked up when I fired it up. It didn't cook according to the timing and directions, so I might try again on a warm, windless day and post the recipe later. I ended up having to cook it some more in the oven. After all that, I had to deal with the dilemma of what to do with the leftovers. I had a bunch of mushrooms to get rid of too and so I was excited to try this in my 12" cast iron pan. It turned out delicious, however I would make a couple of modifications. Substitute some of the chicken broth for white wine and go easy on the chicken broth if using granules. The turkey was injected with a salt/syrup mix and was plenty salty. I ended up omitting the salt in the recipe and used salted butter. [I never use unsalted butter because I don't notice a difference in the food.]

Thai-Style Turkey Soup

We buy turkeys during the holidays when they’re on sale and load up our freezer. Our Anatolian shepherds get daily treats of meat. Sometimes it’s beef, pork, fish or poultry. Usually I cook enough to last a week and lately it’s been turkey. It’s so handy to have in the fridge and since I’m on my kick in this Magazine, tonight was turkey soup night. I added red pepper flakes for extra zing. So good and  healthy! Of course my carby hubby needed rice to go with it. Bonus-it only took 20-30 minutes to make.

Thanksgiving Menu 2016

Thanksgiving morning started with welcoming 2 rescue donkeys to our 4 legged family. Then our meal was planned and enjoyed by the members of Taste of Home; my selections were based on the requests of the boys. I really like their recipe box and shopping list feature. It makes it easy to get what you need from the grocery store and pull up all the recipes at once. The only exception were the 2 pies from my "Baking at High Altitude" cookbook, Noble Pig's Dill Pickle Dip and Rachael Ray's White Cheddar Mac and Cheese. As have many in the past, this was a truly blessed year.

Spaghetti Sqaush Boats (Ground Turkey)

I have made spaghetti squash boats before but not with healthy methods in mind. This recipe is probably the best version I have ever had. I will admit to using heavy whipping cream because I didn't have any half and half; I used plain ground turkey and original rotel rather than spicy. A delightful meal if you're cooking for 2.

AIP Thai Meatballs

I had some ground turkey and am enjoying the auto-immune paleo recipes, that I went to pinterest and just typed in "aip ground turkey". The first thing that popped up was Thai Meatballs. It was a big hit--plenty of spice and flavor. I used the rice cooker as a side (for the boys' sake) and we had fresh pineapple/orange/banana/blueberry smoothies (with yogurt and my recent find of banana milk) for dessert. Per the hubby, I can "please make this one again." That tells me it was a hit; also very easy and fast to make--would be another party favorite for sure.
