Roasted Brussels Sprouts and Carrots

CARROT Recipe #3

[A couple of weeks ago, the hubby harvested carrots from our garden--a big basket full! I decided to explore the world of recipes that contain carrots. This is the first of many that I tried; very pleased with all of them. It didn't really feel like we had a daily ration of carrots because of the multiple ways they can be served and prepared.]

I love that this one is so simple and easy; and roasted brussels sprouts are AMAZING! Adding carrots just makes them that much better. We also had a lot of fresh garlic from the garden, so I boiled them, then roasted them separately before peeling and adding to this pan. What I love is the use of fresh lime and red pepper flakes as the seasoning for roasting. I'm pretty sure I could eat this combination every day.

Caramelized Crispy Brussels Sprouts with Honey Pomegranate Glaze

The hubby bought me my first pomegranates last week. I'd been meaning to buy some and work with him, but never took the time. Later that day, he found this recipe which is probably one of the best side dishes I've ever eaten. I'd never roasted brussel sprouts or cooked them without bacon. I didn't have any pomegranate molasses, so I decided to make it from scratch (with 1 pomegranate). It turned out more like sauce/syrup rather than molasses, so hoping to try it again in the near future. In total it took about an hour and a half to make this dish, but for a holiday or get-together, it will wow your guests!

Instant Pot Balsamic Pork Tenderloin

Unfortunately, we don't have our own pork yet...just a few more weeks. This one came from Sprouts, but it turned out good. I browned it in the electric pressure cooker, then added brussel sprouts, onions and sweet potatoes. The sauce was amazing--sort of a sweet and tangy combination. The bonus was that we discovered brussel sprouts and sweet potatoes are MEANT for this recipe! Wow! So yummy and healthy and done in 45 minutes. :)

Christmas Menu 2016

I scaled down my holiday dinner this year--just a little bit since it was just the hubby and I. However, everything on this list (except for the mashed potatoes and ham gravy) was a new experience for me. I finally found a recipe for brussel sprouts that tastes amazing--of course bacon makes everything taste better; honey mustard ham glaze; and a to-die-for German Chocolate Cake. It was a very yummy Christmas.

--I used milk and ranch dressing, salt and pepper for the potatoes
