Green Chili Breakfast Burrito Casserole

The second round of peppers came in from the garden and the request was for breakfast burritos with green chili for dinner. I loosely used the recipe below for guidance. I used ham instead of sausage, and added tomatoes and mushrooms. Served with homemade salsa, guac, shredded cheese and sour cream. According to the hubby, I could make this over and over and he'd never get tired of it. I'd say it was a success :)

Balsalmic Chicken with Mushrooms and Thyme

Tonight was a simple but flavor-packed recipe. I actually used chicken thighs, Balsamic-Soy, dried parsley and thyme from the garden and cooked some rice in the rice cooker. It was a delicious "just right" healthy meal.

Red Russian Kale with Garlic and Lemon

Let the games begin. Daily, we've been harvesting lettuce for awesome salads. However, today was Russian Kale day. We've had too much, I had to use Pinterest to decide what to do. I actually used 2 different recipes (see next post). Jason loves a similar dish with chards, so I replicated it with Russian Kale. I added mushrooms and red onions as per our usual. It was very nice. Not as pungent as chards. A very tolerable super food. :)

Christmas Menu 2016

I scaled down my holiday dinner this year--just a little bit since it was just the hubby and I. However, everything on this list (except for the mashed potatoes and ham gravy) was a new experience for me. I finally found a recipe for brussel sprouts that tastes amazing--of course bacon makes everything taste better; honey mustard ham glaze; and a to-die-for German Chocolate Cake. It was a very yummy Christmas.

One Pot-Stove-Top Chicken and Rice

We spoil our animals and a prime example is our dogs. I have been making them up chicken or beef broth jars weekly. I put a whole chicken, or roast or whatever in a crockpot and fill it full of water and a few seasonings. Then put the broth in pint size mason jars and each dog gets a half a pint at breakfast and dinner which, one crockpot lasts about a week. Then I have shredded chicken or beef depending on the week. In another blog, I have a recipe for chicken salad, made especially good with the armenian cucumbers from our garden which has now become a staple in our fridge. This past week, I found the following recipe which took almost no effort to make because I used (already cooked) shredded chicken rather than the thighs; I also added onions and mushrooms.
