Proschiutto & Rosemary Wrapped Apples

We are always honored when friends drive out to our place from Denver. Last weekend, I was challenged to make an Anti-Inflammatory Paleo Dinner. I also had purchased a large box of MacIntosh apples from a neighbor, so I was excited to find this recipe. It's probably one of the best appetizers I've ever had. It's worth the extra pennies for prosciutto. :)

Steak Fries wrapped with Flank Steak

I came across this recipe on Facebook and couldn't wait to try it. I modified it using potato wedges (quartered potatoes) baked for 45 minutes at 400 degrees. While the potatoes were cooking, the steak was marinating. I love this particular recipe because the dijon mustard and rosemary created a really nice flavor. I used my grinder to make a powder out of the rosemary, added garlic and also used part spicy sweet mustard and part dijon. I turned up the temperature to 425 degrees and cooked and additional 20 minutes. It tasted amazing and not too time-consuming. :)

Jalapeno Poppers (with Panko)

The hubby's garden is gi-normous this year. He planted jalapeno peppers for the first time and this Kansas, weak-tongued girl has never really worked with fresh ones. [I usually buy them already sliced and in a jar.]
Last weekend we hosted a bbq and I decided to mass distribute them in the form of poppers. I didn't realize they would lose most of their bite just by taking out the seeds and even more so when baking. It turns out that this is one of the best appetizers I've had the privilege to make. Needless to say, they didn't last long :)
