Baked Ham with Golden Beets and Asparagus

Delayed Easter dinner last night. Another awesome sheet pan dinner and great recipe from Food Network. Of course we used our own pork but I added golden beets and asparagus. I followed the Food Network directions, but took about 1/4th of the sauce and mixed it into the veggies, adding them to the pan and continued to cook it all for 40 minutes. It was so delicious and easy! Plus the dogs enjoyed the bones and fat. [I put the ham on a cooling rack placed in the cookie sheet.

Sheet Pan Series (ribs with corn and potatoes)

I've been told I need to start taking pics and blogging about my sheet pan dinners. Although every dinner is very similar, some this week have turned out strangely different and delicious.

"Ribs, corn and potatoes tonight"

Always use parchment paper first, then I cover with aluminum foil and cook for 1-1.5 hours. Also, typically mix veggies and meat in a mixing bowl with olive oil and some type of seasoning.

"The teenager isn't here today so I have steak for the hubby, chicken for me plus corn-on-the-cob and turnips (from our garden) & beets."

"Feeling adventurous tonight...more chicken and steak, corn-on-the-cob, sweet potatoes & onions and butternut squash stuffed with avocado. Definitely will be leftovers since it's just the hubby and me tonight."
