Broiled Thai Sweet Chili Salmon

I've recently started using a pantry inventory app and now know what I have and when it's set to expire. One of those items was a bottle of Thai Sweet Chili. This recipe made one of the best broiled salmons I've had in a long time. I ended up throwing some cauliflower on the pan with the salmon and using the extra sauce over the veggies, then served over a bed of rice. Yum!

Honey Garlic Lime Salmon

I'd been feeling too busy and stressed lately, so I determined that I needed to get back to my happiest place on earth - the kitchen. Now, getting caught up on the past week's recipes to file and share. :)

I decided to make a baked Honey Garlic Lime Salmon with baked Honey Garlic Carrots and Baked Broccoli & Parmesan. I first baked the carrots on half a cookie sheet for 15 minutes then added the broccoli for another 10 minutes. Then I used a second cookie sheet (with parchment paper underneath) for the salmon. Mango Salsa

It's the time of year for grilling and thankfully we've had enough moisture to lower the burn ban in our area. Last night was "Grilled Salmon" night and so I wanted something summer fresh to go with it. The fresh lime and cilantro in this recipe is what made it so refreshing. The hubby, who normally doesn't like fruit mixed in with his dinner (especially in salads), gave this one a thumbs up.

It's also time for the garden to start producing, so we paired it with fresh potatoes, carrots, garlic, onions and chards from our garden. Yummy!!

Salmon Corn Chowder with Coconut Milk

I was cleaning out our freezer this week and pulled out salmon and a bag of last year's summer squash (chopped). I decided I needed to make salmon corn chowder. I've made it in the past but always felt it was missing something. After finding this recipe (on Pinterest) which uses coconut milk, I now have a keeper. I ended up adding a bag of mixed vegetable to give it color since the hubby doesn't eat peppers. I also added arrowroot at the end to thicken it up. Even the hubby had seconds AND leftovers :)

Salmon Chowder

I was tired of the same old baked salmon so I wanted a healthy version of soup/chowder. I googled "aip salmon chowder" and found this amazing recipe. Coconut milk makes everything delicious and the fresh leek, rutabaga and fennel was a great addition. I also added corn and would have loved to add red bell pepper, but the hubby doesn't tolerate bells very well.

Wild Salmon with Naval Orange-Cucumber Salsa

Trying to increase our frequency of meals from the Auto-Immune Paleo cookbook, I found this one in which the salsa tasted a lot like Ceviche. So we topped our salmon with it and then the next night added shrimp to the leftover salsa. The original recipe called for nectarine, but the naval orange was just as delicious. Might have to try it again when nectarines are in season.
