I decided to make a baked Honey Garlic Lime Salmon with baked Honey Garlic Carrots and Baked Broccoli & Parmesan. I first baked the carrots on half a cookie sheet for 15 minutes then added the broccoli for another 10 minutes. Then I used a second cookie sheet (with parchment paper underneath) for the salmon. Additional recipes posted separately.

Honey Garlic Lime Salmon
I'd been feeling too busy and stressed lately, so I determined that I needed to get back to my happiest place on earth - the kitchen. Now, getting caught up on the past week's recipes to file and share. :)

Ahi Tuna
Friday nights are date night, which is usually stay home, cook a higher end dinner and watch a movie. This week, the hubby bought ahi tuna steaks. This marinade was so delicious. I added a little pepper and we had Beet and Russian Kale With Goat Cheese (a recent addition to our household recipes) on the side instead. I added some rice to the rice cooker. Thumbs up!

Chicken Avocado Lime Soup
The hubby bought a bag of limes last week, so I've had to figure out what to do with them. Although margaritas come to mind, I decided to first (re-)make Salsa Verde (Green Chili), then made Green Chili Breakfast Burrito Casserole and tonight Chicken Avocado Lime Soup. I added black beans, corn, and green chili. I served it with tortillas, sour cream and shredded cheese. Definitely a good one for a cold night. :)
