Dutch Oven Ham

I forgot to take a picture of my dutch oven on Easter but I wanted to share this link and picture of the ham I fixed. [We used to raise pigs-I managed to keep a few hams in our freezer and used fresh pineapple for the glaze. I put it all in the Dutch oven for 1.5 hrs] Omg! It was the best ham I’ve ever had. Also had au gratin potatoes in the 10” but didn’t really like the recipe...maybe next time I’ll share.

The pineapple glaze is from an old Betty Crocker cookbook of my mother’s. (the best!)

Pistachio Pineapple Dessert

So I had Pistachio pudding that needed used up and St. Patty's day was this week, so what a perfect time to make a green dessert! I actually skipped the cookie crumble step and just made the pudding mix. The addition of pineapple, lime and cream cheese was exactly what this needed. So tangy and delicious! It was hard not to eat the entire thing in one night!

Pineapple Cucumber Salad

So I've been thinking WAY outside of the box with our cucumber harvest. Last week, pineapples were $0.98 again. I was so excited to find this recipe. I don't think this one needed salt. Next time, I might change it up and add mint instead. The hubby wasn't really a fan, but then again, he's never really liked fruit in his veggie salads. Yay, more for me. lol

Strawberry Pineapple Kombucha

It's that time again! [Actually, every 3 weeks should be that time, but I only have so much time.]  I'm going to post a new kombucha recipe because it's illustrated and all on one printable page! I ended up with 3 quarts so I added 1/2 cup strawberry/pineapple puree then 3 cups of kombucha liquid to each quart. [Reserved back 1 cup and scoby for the next round.] I use passion fruit loose leaf black tea for the fermentation step. Helps the fruits blend well. I'm excited to taste this one because I read that strawberry tends to make kombucha fizzier. :) Here's to your health!

Pineapple Mango "Ice Cream" (AIP, gluten-free; dairy free)

This was super easy and delicious! During the summer, the hubby bought a bunch of pineapples and mangos when they were on sale. I pureed and froze it until I could decide what to do with it. Recently I've had couple of friends that are wanting to follow the Auto-Immune Paleo diet, so the hardest part is finding desserts since I'm used to traditional farm baking (with wheat flour in everything). The great thing about this one is that it makes great popcicles too (which the hubby eats every other day). :) For this recipe, taste it before adding the maple syrup. I added some to this one because I wanted more of a sweetened ice cream taste, but for smoothies, you would likely want to omit the syrup.

Pineapple Upside Down Poke Cake

Wow--I've been so busy with our move to our (coveted) 60 acres (from the city) and changing careers, that I haven't been very diligent about my posts. I apologize to those glorious cooks who have recently provided inspiration....I will try to give honorable mention to as many as I can in the coming days.

This weekend we had some friends out for a Sunday afternoon of bbq, smores and ranch exploration. I made potato salad (with mustard, red potatoes and pickles--recipe to follow) and this delicious Pineapple Upside Down Poke Cake with a fresh pineapple the hubby had purchased. [The trickiest part was doing the flip upside down..better luck next time? j/k...it actually went pretty well. And, although we ran out of time and belt-space, most interested in smores, I managed to discover, the hubby and the teenager LOVED it! 24 hours later and it's half gone. ;) It was very easy and I quite enjoyed not having to frost it, saving a step in the dessert process. Thank you Hen Basket for the share (that I had saved on my pinterest under my Poke Cake Board). :)

Chicken and Pineapple Stir Fry

Two pineapples down--12 to go. :) Last night I made stir-fried chicken with fresh pineapple and green pepper. Cooking the chicken in sesame oil was amazing! I would love to re-make this one over and over.

Pina Colada Bread

Our local grocery store had pineapples 98c each, so the hubby (and his shopping addiction) bought 14! So, last night I looked through "The Best of Colorado" cookbook--a Christmas gift from the hubby a few years ago. I found Pina Colada Bread. I think it was delicious, but definitely needs the glaze to enjoy it. We tried it without the glaze and agreed it wasn't as good. I think I added too much baking powder and/or baking soda as it slightly affected the flavor. Next time I will make a couple of adjustments, but overall it was very good. It was fun to make a Colorado favorite. :)
