MEXICAN STREET CORN PASTA SALAD

The hubby's request yesterday was Chicken Enchiladas with green chili (previously posted when he bought Hatch chilis). It was almost as good with roasted Anaheim peppers, but I'm definitely looking forward to Hatch season again.

While I was researching what kind of pepper to substitute for Hatch, I came across this recipe and HAD to try it. I'm not usually a fan of pasta recipes (which can often taste bland if you don't double check the flavor), but this one was a winner. I had to double most of the ingredients and I would probably add sour cream to give it more tang.

Indian-Spiced Eggplant and Cauliflower Stew and Bacon-Wrapped Avacados

The hubby has been wanting to increase his turmeric intake which means, I get to explore the many wonderful flavors of Indian cuisine. I just happened to have all the ingredients for last nights meal. I paired it with a butternut squash (mashed) and "To-Die-For" bacon-wrapped avacodos (which were so good, I'm almost speechless). I didn't have garam masala, but looked it up and found out it's a combination of spices that I already had so I made my own mixture and added it to the stew. I can't have anything too spicy so I used regular curry and the hubby added sriracha. :) Very easy to make and worth the experience.

Zucchini Fritters with Dill Avocado Dip

Last night we had a delicious salmon stuffed with lobster and cream cheese. I paired it up with a different version of zucchini fritters with a dill avocado dollops---oh so good. The teenager was not with us so it was a nice "stay-date" (stay at home date--similar to a stay-cation). Not much to add to this one, the recipe and meat selection really speak for themselves. :)




**Mine was not dairy free--I added Helmans and a little bit of lemon juice and salt. I also included the dill as suggested by the first recipe webpage. **
