Pecan Chewies

What's expiring this week? Pecans and self-rising flour. What can you do with those ingredients? Pecan blondies! Don't make these if you're trying to lose weight. The brown sugar/pecan combination is ADDICTING! It was hard not to eat a half a pan in one night. I will definitely be keeping this one in my recipe box to bring to a party. Your guests will thank you-or not if they eat too many. Haha.

Zucchini Brownies (or Cake?)

I really enjoy cooking the same thing but with a different recipe. This year, I tried this one that was labeled "brownies" but it turned out as a cake. I had leftover ganache so that became the frosting. The hubby prefers a higher frosting to cake ratio, so I kept hearing "needs more frosting". I think, if he had his way, he would skip the cake and go with just frosting. lol

Butterscotch Zucchini Brownies

It's the month of Zucchini and I always get excited to see what Pinterest has for me each year. I literally started with the first and have been working my way down. This one turned out more like a cake for me. It didn't take away from the sinfully delicious flavor though. The hubby gobbled it up and I was tempted to make more, but so many recipes, so little time. ;)

Bullet Brownies

Finally carved out time to get caught up on blogging some awesome recipes that I've tried in the past couple of weeks. First up is desserts-I've been doing a lot of baking from "Aunt Bees Mayberry Cookbook". There are some really fun recipes that use both old fashioned methods and combine interesting ingredients. 

These are probably the best brownies I've ever made. They are very dense (almost fudge-like) and possibly due to the altitude I had to bake them 35-40 minutes. Wish I would have had some of my homemade ice cream on hand.

1 cup margarine
2 cups sugar
4 tablespoons cocoa
4 eggs, beaten
1 1/4 cups all-purpose flour
1 teaspoon vanilla extract
1/2 cup chopped nuts (I used walnuts)

Grease a 9 inch square pan and dust with cocoa. In a saucepan, melt the margarine. Add the sugar and cocoa, and blend well. Remove from the heat and add the remaining ingredients. Pour into the prepared pan. Bake in a 325 degree oven for 20 to 25 minutes. [These freeze well.] They're very rich so may server more than 9.

Sour Cream Zucchini Brownies

So this just happened last night and was every bit as delicious as I expected. The recipe is straightforward and did well in high altitude. I did end up having to cook it for 1 hour and probably could have gone longer. Please make this for your family if you get the chance :)
